The acronym EVOO stands for Extra Virgin Olive Oil and is considered the best type of olive oil because of the way it is produced. We tell you how it is made:

Between the months of October and March the olive is harvested, taking into account 3 important aspects: harvest time, origin of the fruit and harvesting system.

Olives collected from soil and tree olives are loaded separately. They are transported in boxes with holes that allow air circulation and ventilation, they are taken to the oil mill that will be responsible for producing Extra Virgin Olive Oil (EVOO). The oil mill is responsible for passing the oil through different processes to clean and eliminate possible impurities from the olive. When the olive cleaning is finished, it is time to take it to the mill where the fruit is cut and transform it into a dough from which the Extra Virgin Olive Oil will be extracted.

All this process must be carried out at a temperature not exceeding 25-30 º in order to achieve excellent quality without missing the characteristic aroma and fragrance of EVOO.

In short, Extra Virgin Olive Oil is 100% olive juice, without any other additives, which has passed controls where the olive meets physicochemical conditions and does not have to have organoleptic negative qualities, that is, physical characteristics that can be perceived with the senses: taste, smell, temperature, texture or color.

Once the EVOO is produced, it must be stored at a homogeneous temperature of 15-18º, the cellar must be equipped with its insulated ceilings and walls, allowing the maturation of the oil without oxidation.

Finally, there is the packaging, which is also done with care. It is necessary to have control over temperature, hygienic conditions, air, light and an extreme monitoring of cleanliness. All this leads to the production of an excellent and exceptional Extra Virgin Olive Oil.
