Cold avocado and zucchini soup
Summer, with its high temperatures, makes you only want to eat cold foods. Also, most of the time, you don't feel like spending time in the kitchen, in front of the stove, being even hotter.
For all this, we leave you a quick recipe, without the need to spend much time in the kitchen and without any cooking. It takes less than 15 minutes to prepare a cold soup of avocados and zucchini with extra virgin olive oil
Ingredients
1 large ripe avocado
1 medium zucchini
1 celery stick
1 garlic clove
1 Italian green pepper
1 Lime
220 ml vegetable stock or water
Milk of your choice or light cream
Hot or sweet paprika to taste
Fresh Parsley
Ground black pepper
Salt
20 ml organic extra virgin olive oil
Preparation
Preparation is quick and easy. All the ingredients are raw. The quantities are indicative since they depend on the taste of each one. You can make it thicker or more liquid, adding more or less milk, if you want it to be looser in taste, add more milk or the vegetable drink you like. If you prefer it to be a bit spicy, add more black pepper and hot paprika. If you do not want it to have that spicy taste, do not add black pepper and add sweet paprika instead. As we say, you can make all the modifications you want until it is to your taste.
Peel the avocado and cut it into pieces, lightly peel the zucchini, also cut it into pieces. Put the two ingredients in a blender or food processor, mash well.
Add the rest of the ingredients, for the green pepper, you have to remove the seeds and the white parts, for the chopped garlic, remember! Remove the germ (inside) to have a softer flavor, the celery in pieces, extra virgin olive oil, vegetable stock, milk, parsley, black ground pepper, salt and paprika to taste.
Crush everything very well, until you get a smooth and homogeneous texture, and put it to cool.
Serve the cold avocado and zucchini soup with extra virgin olive oil, very cold in glasses or in a bowl. You can use it as an appetizer or as a first course accompanied by meat or fish. It can also be a dinner, as it is a light dish full of vitamins.
